Santé is located in the Fairmont Sonoma Mission Inn & Spa, which is tucked off of Highway 12. This charming dining room has warm gold walls, woven rattan chairs, and views of the pool area. While corporate hotel guests make up much of the clientele, the service is friendly and the ambience relaxed. The interesting menu unfolds such delightful presentations as a starter of "grown-up" macaroni and cheese studded with generous portions of Maine lobster and black truffles in a creamy fontina sauce. A trio of roasted rabbit rack, bacon-wrapped loin, and tender leg confit coupled with morels, favas, potatoes, and natural jus is fulfillment personified; while a towering Meyer lemon soufflé quivers delightfully at the end, eliciting many satisfied smiles.
