The Michelin Guide's review
Step away from the bustle of central Amsterdam, walk through the lobby of De L'Europe hotel, awarded Three MICHELIN Keys, and immerse yourself in Flore's unique world of conscious fine dining. Diners are welcomed in the kitchen with an introduction to the ingredients and their provenance, before moving on to the intimate, nature-inspired dining space with its wonderful views of the canals. The dedication of the front-of-house team is evident throughout.Bas van Kranen's cuisine is characterised by an original and mindful approach to the natural world. Biodynamic growers are among his regular suppliers, and he has removed dairy from the kitchen. His search for solutions fuels his creativity and has given rise to a clean cooking style with a subtle Japanese influence. Game occasionally appears on the menu in autumn and winter, but in spring and summer he turns his attention to the North Sea. The entirely plant-based set menu is served year round. The small plates keep you intrigued down to the last bite. The chef seeks out contrasts and pushes boundaries, for example, bringing together 25 types of vegetables, herbs and fruit in an exuberant creation with spicy, floral, bitter and refreshingly tart nuances. Bas van Kranen explores the depths of his ingredients, creating dishes that evoke emotion.
