The kitchen changeover at the beginning of 2025 brought into the spotlight the young and talented Trentino chef Andrea De Lillo, who skillfully draws on his extensive experience in top-tier establishments. Together with the owners, who also manage the Hotel Belfiore that houses NIN’s spaces, he has established an ultra-modern and creative cuisine based entirely on local raw materials. It won’t be contradictory to see shiitake mushrooms or wagyu beef served, because these are all local cultivations and farms: the famous Japanese beef, for example, comes from nearby Monte Baldo. The dishes, theatrical and well-executed, are presented in two tasting menus that alternate between meat and lake fish, showcasing extensive use of vegetables, particularly those from their own small farm. Fortunately, the dining room remains the same: on the first floor with views of Lake Garda, especially from the few tables on the veranda, which, as always, we recommend booking in advance.
