The owner, who hails from Bacolod, brings authentic flavours from his hometown to the table. The grilled meat, seasoned with coconut vinegar, ginger and lemongrass, then brushed with chicken oil, is juicy and aromatic. To best enjoy the signature grilled chicken, mix the coconut vinegar with a little soy sauce, squeeze in calamansi, crush chillies with a fork, then dip the chicken into the sauce.
