The Michelin Guide's review
The flagship of Andreas Caminada's suite of restaurants delivers an exceptional experience across the board – from the wonderfully stylish interior of this historical castle nestled at the foot of Piz Beverin, to the impeccably professional service, and the sophisticated, beautifully balanced cuisine abounding with contrasting flavours. Instead of relying on conventional premium ingredients, the dishes draw almost exclusively on the very finest of what the Graubünden region has to offer! The tender duck breast with its light, spiced smokiness, served with a steamed gyoza filled with braised duck leg and aromatic beetroot is a perfect example. Some of the produce is sourced from their own fantastic vegetable garden. The meal kicks off with an array of appetisers and amuse-bouches – something of a "pre-menu" in itself. A definite plus: à la carte options are also available. The extensive wine list is excellent, as are the recommendations. Service is friendly, attentive and remarkably accomplished. The refined guestrooms are in keeping with the whole.
