Agli Amici is one of the finest examples of contemporary Friulian cuisine, a restaurant that uses food to showcase the many facets of a border region, rich in cultural influences and extraordinary ingredients. The menu centres on two tasting menus, one of which is dedicated to plant-based dishes, complemented by a selection of ‘favourite dishes’ that trace the restaurant’s history through some of its most iconic creations, each accompanied by the year they were first created. It is, however, in the tasting menus that Emanuele Scarello’s gastronomic vision is most accomplished, based on constant research and a deep understanding of the local area. The pastures, vegetable gardens, woods and mountains of Friuli-Venezia Giulia serve as a source of inspiration for refined and distinctive dishes, often enhanced by ingredients from other regions in a harmonious blend of tradition and openness. Among the most memorable dishes are the variation of tender shoots and courgette flowers served with the rare centrolofo, presented both raw and cooked, and the elegant take on Kvarner scampi, enhanced by a delicate layer of rhubarb and lard on a raspberry cream base, rounded off with a delicious shellfish crème brûlée.
