Contemporary
The Michelin Guide's review
A contemporary venue with an open kitchen and designer touches, serving local cuisine and dishes from the Sierra del Segura region, brought up to date with creative reinterpretations of traditional recipes and meticulous presentation. Chef Javier Jurado, who fell in love with cooking in his grandparents’ restaurant (called Los Ángeles, hence the name Malak, the Arabic word for 'angel'), showcases his cuisine across two interesting tasting menus: 'Aldeas Perdidas' (Lost Villages) and 'Sierra de Segura'. From the moment the appetisers are served (fritters made from pork stew, acorn-fed Iberian ham croquettes made with sheep's milk, mushrooms stewed in port with Segureño garlic, etc.), we are introduced to the flavours of the mountains, reaching their maximum expression in dishes such as trout from the Aguamula River with pilpil and rinrán. Their signature dessert? Cortijo de la Vicaría cheese, quince and walnuts.
