The Michelin Guide's review
It is in this small town that you find Essences, a restaurant inspired by the beautiful landscape of the Serra da Lousã to create its dishes. Led by the Spanish chef Ferran Arnau, this rustic-style, relaxed-ambience space calls itself ‘landscape gastronomy’, which is hardly surprising given the natural beauty that surrounds it. With a contemporary presentation, the proposal fuses the flavours of the Iberian Peninsula through a menu of Petiscos (Portuguese small plates) and two tasting menus: Paisagem (landscape) and Viagem (journey). Among the specialities, you will find Veado (venison) with beetroot and cocoa and Bacalhau (salt‑cod) cured for more than 18 months, served with chickpea purée and grilled cabbage. To finish, it is worth trying Um pijaminha de doces e frutas (assorted homemade sweets and fruits), a fine selection of assorted homemade desserts which, as they themselves describe it—makes for a greedy finale!
