This Lyon institution run by Christophe Marguin draws its inspiration from fine classic cuisine, which it adapts into a modernised form: volaille de Bresse with Étrez cream, frogs' legs sautéed in butter, Charolais beef tenderloin in peppercorn sauce and flambéed with Cognac. "Le Président" is a reference to Édouard Herriot, a former mayor of Lyon, who used to come and have coffee here.
