Signum, a hotel and restaurant run by the brilliant Caruso siblings, is one of the symbols of the beautiful island of Salina. Luca, who manages the charming hotel built to resemble a typical Aeolian hamlet, is also responsible for the interesting wine selection and enjoyable wine pairings (often extended to include cocktails), while Martina is at the helm in the kitchen, where she creates imaginative dishes full of character using ingredients from the island and nearby Sicily, including vegetables from the hotel’s own kitchen garden, as well as local fish and produce from the surrounding area. With her new “Oltremare” menu, the chef has introduced the technique of aging fish, which she uses with care and precision in certain recipes such as barbecued or raw grouper – a fine example of a bold dish which showcases the intense Mediterranean flavours of this superb fish to the full.
