Clinging to the rocks at the entrance to the Vallon des Auffes, Coline Faulquier's new restaurant commands a dramatic view over the Mediterranean, the Château d'If and the surrounding islands. In a dining space characterised by soft neutral tones, clean lines and floor-to-ceiling windows, the Marseille-based chef serves up vibrant, inventive and precise seafood cuisine. The dishes, often vegetable-forward, play on contrasts: hot/cold (confit artichoke, raw "cappuccino", basil and bottarga), raw/cooked (raw and cooked prawns, prawn-head fumet, Timut pepper, almonds) – they have real character, asserting their distinct culinary identity. And we would expect nothing less from this dynamic chef! The kitchen ensures freshness through direct sourcing from the port's local fishermen.
