Maxime Sanzot and his partner have opened this buzzy bistro with a pavement terrace, (sheer bliss in fine weather), just opposite their wine bar, Anthocyane. Bistro Camélia is equally attentive to the quality of the wine, as the cellar, well-stocked in natural wines, demonstrates. Local, seasonal produce dictates the culinary score and the chef may pair salmon trout in a crispy skin with the acidic tang of lightly pickled Belgian endive, briny samphire and a beurre blanc-style jus made out of fish bones. Unfussy, wholesome food that seeks to shine the spotlight on the delicacies of the Namur region.
