The Michelin Guide's review
After a glittering career in the region, youthful Rémi Genot has returned to his roots in this famous wine-growing village. He pays homage to local producers and showcases fine cuts of meat prepared by his father in the next-door butchers. As comfortable working with vegetables as with fish and meat, he creates meticulous dishes, packed in colour and character. He is also skilled at juxtaposing different textures, in dishes such as tomatoes, fresh smoked goat’s cheese, rose geranium; brill, green peas, girolles, shellfish and melissa jus. Burgundy takes pride of place in the wine cellar and Anna, the chef’s partner, gracefully and seamlessly manages the front of house.
