One passes through the entrance of the thoroughly modern Hotel Lone to reach this accomplished restaurant dedicated to Japanese cuisine. The interiors are minimalist and pleasant, but the true highlight is the delightful outdoor service in the summer garden surrounded by pine forest. Here the encounter between Istria and the Orient is expressed not so much through fusion cooking – the menu offers great Japanese classics such as sushi, sashimi, nigiri, gunkan, uramaki and hosomaki, alongside gyoza, soups and other warm dishes – as through the use of predominantly Istrian ingredients. This synthesis finds its finest expression in dishes such as the seafood salad – with raw and marinated fish that may include scallops, Pacific yellowtail amberjack, and baby cuttlefish – accompanied by olive leaf tea, seaweed and crab mayonnaise, or in the rabbit loin with teriyaki sauce. The cocktail list is also well developed.
