This is the Tokyo outpost of Le Pristine of Belgium. Directing the kitchen is Sergio Herman, a standard-bearer in the world of Dutch cuisine. The restaurant introduces ‘New Italian’, which combines pure Italian flavours and the culinary traditions of Herman’s native region of Zeeland, in the Netherlands. The orecchiette is a true Le Pristine classic bearing Sergio Herman’s signature and is now available in Tokyo. The art and background music combine to help create a modern dining experience.
