‘Break Beats’, the name of a musical genre, is the perfect name for this shop, whose chef wears two hats as an active DJ. The clear base soup uses Amakusa Daio chicken, while porcini mushrooms add umami for soy sauce-flavoured ramen, and freshwater mussels does the same for salt-flavoured ramen. Ingredients such as smoked pork fillet and fried enoki mushrooms switch up the flavours. A catchy remix of old ramen favourites.
