While Vila Joya’s setting makes an impact, both for its beauty and ocean views, Dieter Koschina’s offering warrants special mention, as this Austrian-born chef has succeeded in blending the fine craftsmanship of classic Central European cuisine with flavours and produce from Portugal — a country that captivated him over 30 years ago. Excellence is savoured in every bite, for beyond solid execution, he shows boldness and plays with unconventional flavours, at times introducing tropical fruits and Asian notes. The focus is on a comprehensive tasting menu that evolves monthly, although at lunchtime there is an additional daily-changing option (overnight guests may opt for an à la carte format).
