Hanging on the wall of this stamp of an establishment is a T-shirt that reads, “Better than your grandmother’s mole.” If you aren’t Mexican, the slogan definitely holds true, but if you are it probably still holds true. After all, they don’t call Chef Rocio Camacho "The Goddess of Mole" for nothing. Her sauces are ace, served in a humble outpost.
Diners are greeted with a basket of warm chips laced with a myriad of moles that range from sweet and spicy to smoky. Best of the lot though is the classic mole Oaxaqueño, a 32-ingredient symphony of flavors. Coming in at a close second is the black-as-night huitlacoche sauce composed with “Mexican truffle.” Poured over a square of seared mahi mahi, it would be as good even if served atop an old shoe.- MICHELIN guide inspectors
