As an enthusiastic artisan-cook, Tuscan chef Auro Bucci (who for a long time worked in Piedmont and then in the Aosta Valley) cooks mostly organic produce (home-made ravioli and cannelloni), gluten-free desserts, as well as an appetising vegetarian set menu, and has a strong awareness of the seasons.
