From the dining room and the terrace, the view of the Atlantic is superb, enough to inspire dreams of embarking on a long cruise. But escapism is to be had in the dishes, where seafood ingredients reign supreme: salmon confit at 54°C, organic fennel from Les Jardins de la Chaume; Challans poultry, aubergine, Parmesan and chanterelles.
