Chef Boussemaere and his partner Jessica transformed this lovely former solicitor’s house with a pretty patio and an ancient copper beech tree in the garden to the rear over twenty years ago. Tradition and modernity continue to embody the house ethos, courtesy of rich, legible flavours and deftly crafted ingredients. The chef may coat a glistening white piece of Atlantic cod in crushed hazelnuts, then flanking it with a punchy mineral watercress cream and his spin on chicken basquaise bears witness to his generous nature. We recommend booking a room in the hotel to explore the lovely Westhoek countryside.
