It's not just a clubhouse for the cool, though—this is a serious chef-driven kitchen. Chef Viet Nguyen and his team turn out creative dishes with a Southeast Asian bent. Some of the hits include kampachi crudo with beet-cured amberjack and compressed mango finished tableside with a yuzu-dashi broth. Laksa risotto blends the classic Italian dish with the flavors of the much-loved curried noodle soup. To finish, sticky toffee pudding arrives with a theatrical plume of liquid nitrogen vapor.
