The Michelin Guide's review
The jewel in the crown of Andreas Caminada's suite of restaurants delivers an exceptional experience across the board. From the wonderfully stylish interior of this historical castle nestled at the foot of Piz Beverin, to the impeccably professional service, to the sophisticated, beautifully balanced cuisine abounding with interestingly contrasting flavours. Instead of relying on conventional premium ingredients, the dishes draw almost exclusively on the very finest of what the Graubünden region has to offer! Some of the produce is sourced from their own fantastic vegetable garden. The meal kicks off with an array of appetisers and amuse-bouches – something of a "pre-menu" in itself. A definite plus: à la carte options are also available, for example such classics as the "2003 veal tortellini with nut butter foam", a true Caminada signature dish. The extensive wine list is excellent, as are the recommendations. The experienced and well-drilled front-of-house team is always on hand – not least charming hostess Patrizia Planer. The refined guestrooms are in keeping with the whole.
