The couple has created strong ties with local producers, such as Ferme d’Artagnan and Ferme Fourchette, who have become part of the family. The chef crafts their excellent ingredients generously and creatively, underscoring the distinctive flavour of Belgian endive with braised beef cheeks, crunchy celeriac and marinated onion.
