Alongside his wife Yolanda Rojo (the daughter of the founder), chef Juanjo Losada creates what could be described as cutting-edge Leonese cuisine, as part of which his creative and meticulous dishes are built around the best local, natural and seasonal ingredients. The only option here is a single tasting menu that changes throughout the year along with a wine pairing option. He is also very keen on flying the flag for the region’s small-scale local producers.
