The chef here employs premium ingredients and his considerable technical skill to conjure up his creative cuisine, transporting diners to Brazil, for example, with a wild pollack moqueca, herb salad and farofa. His impressive desserts, such as beef heart tomato in puffed sugar and sage cream, deserve a special mention. Terrific wine list.
