In a magnificent venue, Alain Ducasse puts into practice the concept of "naturalité" – the Holy Grail of cooking, according to him – in a bid to uncover each ingredient's truth. Based on the fish-vegetables-cereals triptych (here, too, a respect for nature prevails), some dishes are outstanding, and the quest knows no bounds.
