Aji (a type of chilli pepper) is one of the ingredients that Pelle Swinkels discovered on his travels through Asia and South America – travels which have had a strong influence on his menu. He mixes these influences with basic French techniques to create delicious and intriguing dishes with an adventurous feel which is echoed in the restaurant’s bold, vintage lounge-style decor.
