Here, you would be well advised to take the chef’s advice and choose one of the three omakase menus (the Japanese word ‘omakase’ translates loosely as ‘leave it up to us’). Show complete confidence in your host by enthusiastically ordering menu 3, savouring each and every ‘surprise’ dish until you ask the kitchen to stop, otherwise you won’t stop eating...
