The origins of churrasco date back to the 17C, when cowboys killed cattle for their fat and leather, taking advantage of this process to cut off the easiest pieces of meat before roasting the animal whole in an open pit in the ground, using just the cinders from the fire to add flavour. In this traditional steakhouse, the cuts of meat are roasted, seasoned with coarse salt and cooked to perfection in modern churrasqueiras, before being served accompanied by a large buffet.
