While remaining true to the spirit of Bernard Loiseau, Patrick Bertron has succeeded in enriching Saulieu's culinary offering with dishes of his own. Inspired by his native Brittany (lobster, langoustine, turbot) and Burgundy, he gives his experience expression in his dishes. Nostalgic French classics, such as Loiseau's famous jambonnettes de grenouilles - frogs' legs with garlic and parsley purée. Magnificent wine selection.
