Choose between highly enticing set menus with a touch of influence from La Mancha, which take us on a journey along the banks of the Tajo, Jarama and Tajuña rivers. The chef’s enthusiasm for the area and its local produce does not in any way prevent him from reinterpreting ingredients from elsewhere, an attribute which saw him win the International Red Prawn Competition in Dénia in 2020.
