There's been a change at the helm in the Due Buoi with the arrival of a young Japanese chef in the kitchen. Fans of traditional Piedmontese cuisine have no need to worry, however - although the menu now includes the occasional Japanese influence, such as the ravioli del plin in a katsuobushi broth, and the combination of pistachio with yuzu, the main focus here is still very much on dishes from the region.
