"Laurent Petit is blossoming in Annecy-le-Vieux, at Le Clos des Sens, where he devises cuisine lacustre (""lake cuisine"") of an exceptionally high standard. On the menu, meat has been replaced by organic fish from the lakes – you will find Arctic char, lake trout or crayfish from Lake Geneva – which is elevated to culinary greatness. Petit is definitely one to watch!"
