The cooking inspiration comes from the owner's time spent in Mexico City, the Yucatan and Oaxaca. Ingredients are a mix of imported - like grasshoppers to liven up the guacamole - and home-grown like Hertfordshire pork. Spread over two floors, the rooms are as colourful as the food.
