Even those who arrive before they open may face a long wait, so don’t come if you’re in a rush. Once inside, you’ll be seated at a simple wood table or at the bar, collaged with Polaroid portraits of guests savoring their ramen. The reason for the wait becomes clear when you’re presented with a rich and utterly delicious bowl of tonkotsu ramen full of chewy noodles, roasted pork and scallions.
