Owner-chef Koichi Okita writes the menu himself daily, wanting his customers to feel seasonal changes through ever-changing ingredients. He puts much effort into unfamiliar seafood dishes to make customers happy. Ryotei preparation techniques are evident in dishes like the shimesaba tsukuri and the vegetable takiawase.
