Renaud Marcille (formerly of Lucas Carton) is today at the helm of this bistro, a bona fide Parisian institution. The food is rich in Basque rural accents, but not only. While much of the produce comes from “down south” (piperade, chipirons, sautéed snails), the menu also highlights more modern culinary creations and even game in season, such as the famous “oreiller de la belle Aurore” (game pie).
